Description

POLYFOOD is a compact, multifunctional unit for milk pasteurisation, production
of cheeses and the cooking of curd or food.
In just 2 m2 of space, it brings together in one installation:
- Pasteuriser
- Cheese multipurpose kettle
- Ricotta maker
- Yogurt maker
- Fuser
- Hot water preparation
- Thermal generator
A single machine, therefore, capable of replacing an entire dairy factory.

From origins to modern technology

Since ancient times, man has learnt to heat liquids by immersing red-hot stones in
containers: a simple but ingenious method.
INVENTA has transformed this stone-age principle into a modern, patented solution,
capable of directly heating or cooling the contents of a container by immersion of
an innovative heat exchanger.

The heart of the system: the Radial Dynamic Exchanger (SDR)
The SDR is the technological core of POLYFOOD:
- It consists of a tube bundle carrying hot water, steam or cold water, depending on the process.
- In the centre is a variable speed turbine that, during immersion, sucks in the
liquid from below and pushes it radially upwards, ensuring fast and efficient heat exchange.
Thanks to this system, heating and cooling are uniform, controllable and energy efficient.

Versatility and ease of use

POLYFOOD makes it possible to:
- Heat, pasteurise, cool and cook any liquid, semi-liquid or suspended solid foodstuff.
- Perform cheesemaking of all types of cheese.
- Producing ricotta, yoghurt and many other dairy specialities.
By using several containers, it is possible to realise differentiated productions in terms of type and quantity.

Digital control and total traceability
All thermal processes are managed by a PLC system with an intuitive touch screen:
- Manual or automatic management of all processing steps.
- Setting and recalling specific programmes for each food or cheese.
- Complete recording and tracking of thermal cycles, which can be displayed in graphical or tabular form.
- Data export to USB stick for later analysis on PC.
- Industry 4.0: eligible for the capital goods tax credit benefit under the 2020 Finance Act.

Comparison: Polyfood vs. Traditional Miniature Dairy

Objective: to transform 900 litres of milk into caciotta and ricotta.

Polyfood (with 3 x 300 L vats)

Main strengths:
1. High thermal rates: heating/cooling at 3 °C/min (twice as high as conventional), drastically reducing pasteurisation and cooling times.

2. Independent containers: each vat can be moved after the thermal phase to complete “cold” processing (coagulation, draining, etc.), while the Polyfood is immediately available for a new batch.
Effect on productivity:
- All 900 L are processed in 7.5 to 8.5 hours in total.
- Polyfood is only actively used for about 3 hours, leaving time for other cycles or
activities.

Traditional 300 litre mini-dairy

Main limitations:
1. Slower thermal rates: 1.5 °C/min, so double the heating and cooling times.
2. Single, always busy tank: all stages take place in the same tank, which remains
occupied until the batch is completed and the tank cleaned. Waiting (e.g. coagulation) stops production.
Effect on productivity:
- For the same 900 L, 12 to 14 hours of work are needed.
- The main tank stays busy for about 11.5 hours, slowing down production and
increasing operational stress.

Conclusions and purchasing advice

Polyfood guarantees:
- Increased productivity (900 L handled in one day).
- Reduced labour costs.
- Multi-lot flexibility and less downtime.

The traditional mini-dairy is a bottleneck for these volumes, with too long a lead time
and lower profitability.
