The thermal exchanger is made up of a group of pipes through which hot water, steam or cold water is passed, according to the type of process that is wanted to be carry out. It's completely made of stainless steel and covered with food grade antiadherent Teflon* or with antiadherent electro polished treatment.

At the centre of the pipe group is a variable speed turbine which is closed at the upper end and has a bayonet connection on the lower end. The liquid to be treated is aspired  from the lower part and pushed upward and radially across the pipe group.

Heating

Due to the very high efficiency of the SDR, the operating limit is represented nearly exclusively of the power of the hot water or steam generator that supplies the SDR.

Cooling

The efficiency of the SDR depends mostly on the temperature difference  between the liquid to be treated and the liquid circulating in the SDR. Higher is the difference, higher will be the exchange rate. Using tap water with temperatures up to 20°C it is possible to cool with good speeds liquids down to 40-35 °C. In order reach  lower temperatures it is necessary to use iced water (eventually with glycol)

Fields of use

Although the applications of the SDR are practically infinite, its use on heat treatments of food is sure the field where its characteristics come more exalted.

It's not possible to heat rapidly, because the proteins remaining for a long time in contact with the heating wall (for centrifugal effect), they will be burnt or damaged.

With the SDR it's possible to heat rapidly, because the proteins remain in contact with the heating tubes for a very short time, avoiding any kind of damage.
